Executive Chef Tom Greening runs the family run ale and eating house in Campsea Ashe, near Woodbridge in Suffolk.
Originally from Maidstone, Kent – and very proud of it – Tom spent three years working at The Swan in West Malling and then another two at The Swan at Shakespeare’s Globe, London (both Swans are Charvet owners). He has also spent time globetrotting including a stint at a luxury lodge in Davos, Switzerland.
Food is a key ingredient to the success of the recently refurbished Dog and Duck, which features a stunning dining area and bar, as well as a private dining room, and large country garden.
Why did Tom choose Charvet?
“I’d worked with Charvet previously at The Swan so I knew the quality and how well it lasted.
“What I really wanted for my new business was that heavy-duty build quality that you get with Charvet.
“If I want to sell the business on in 10 years’ time, the Charvet ONE range will still be here and it will still be an asset for the business.
“Yes, there is a premium to pay for Charvet but I thought it well worth the extra. The sort of medium duty kit you often see in pub kitchens just would not be worth anything after 10 years of use.”
Tom’s kitchen was designed and installed by Ideal Catering Solutions and the Charvet ONE range includes a twin fryer, plancha, solid top and gas hob with static oven under and there is also a Charvet Rise and Fall Salamander.
