“It’s a relief not to have to bend down onto your knees to light a fryer,” says Comet Hotel Executive Chef Stephen Rey.

That’s just one of the positives that Rey has noted about working with the Charvet ONE Series 4-metre long commercial cooking range, installed at Element Bar & Kitchen.

“The range really puts out a lot of heat and there is a good mix of elements, some of which can do a double job – the pasta boiler for example, is also working as a bains marie when we need that.

“The suite has everything on it and what I really like is that it is easy to work with. The charbroiler for example, is easy to light – I’ve worked in kitchens where just getting the equipment lit can be a problem. With this Charvet, you just turn the knob, push and listen for the ‘tick, tick, tick..’ and then it is on!

“The design of the chargrill is also good; the briquettes fit just one way and there is a channel to carry grease away… great design and they are even dishwasher safe.

“This is my first Charvet suite and what I like about it is that it is easy to clean and user friendly, with easy to grip control knobs that allow you to control the temperature in the heat of battle. When that ticket comes in with the customer’s order, you have 8 minutes to serve. Chefs are thinking about what’s cooking on the griddle or in the fryer and they must be able to control temperature easily.

“The Charvet equipment is reliable, the layout is great, and it just works!

 “The refurbishment really has been a great success and it has been warmly welcomed by lots of locals. WE can serve 100 covers a night and foodservice starts with breakfast for the hotel guests through to full-service restaurant, 5.30am to 11pm.”

The Comet Hotel’s feature packed Charvet ONE Series commercial cooking range was designed and specified by professional food service kitchen designer Rosemary Hare FCSI. The refurbishment of kitchen and bar facilities at The Comet was carried out by C&C Catering Equipment

As part of the extension and refurbishment, C&C worked across the main kitchen, basement storage areas with cellar cooling and bulk cold rooms, and new bars with front and rear sections.
